What is trahana?

Trahana is a traditional Greek soup, or rather a thick, creamy porridge made of wheat and milk or sour milk. It is one of the oldest dishes in Greek cuisine, which, although modest and simple, has remained a part of the daily diet of many Greeks to this day.
There is sweet and sour trahana.

After preparation, while the mixture is still soft, it is left to dry in the sun, then crushed and packed for storage. This dry form is sold in supermarkets and used for cooking throughout the year.

Basic recipe for preparing trahana:

1 cup of trahana
2 cups of water
½ cup of olive oil
Salt to taste
Cook over low heat, stirring constantly for about 15 minutes, until thick and porridge-like. Serve warm, with the addition of feta cheese or a spoonful of Greek yogurt.
