Eliopites: Olive Pies That Bring the Mediterranean to Your Table
If you are in search of a new fasting recipe and you enjoy olives, this Greek pie will delight you. It is called eliopita, a gem of Greek Mediterranean cuisine.
It is particularly popular during fasting, making it ideal for a festive fasting table.
For Greeks, this pie brings back memories of childhood and can also be found in bakeries.
It is prepared very simply, and below the recipe, there is a video where you can watch the preparation.
Recipe for Eliopita - Olive Fasting Pie
Ingredients for 10 to 12 small pies:
- 500g ready-made phyllo dough olive oil for brushing the dough
For the filling:
- 500g black olives, well washed to remove salt, pitted, and coarsely chopped
- 4 small heads of black onion, finely chopped
- 2 cloves of finely chopped garlic
- 1⁄2 bunch of finely chopped parsley
- 50ml olive oil
Preparation
Filling preparation:
- In a saucepan, add 2 tablespoons of olive oil over medium heat.
- Sauté the onion until caramelized, then add the finely chopped garlic and sauté for another 2 minutes.
- Let the mixture cool, then add the chopped olives and fresh parsley.
Dough preparation:
- Place one sheet of phyllo dough on a work surface lengthwise, and brush it with olive oil.
- Grab the two bottom corners of the dough and fold it in half. Lightly brush with oil.
- Grab the two corners on the right side, fold them to the left, and fold in half again. Lightly brush with oil.
- Flip the dough and oil the other side as well.
- Crumple the dough with your fingers using a pinching technique starting from the bottom, going upwards (approximately 6 times).
Shaping and baking:
- Place a full teaspoon of olive filling on one side of the dough.
- Close the top and bottom of the dough, then roll it up.
- Place the small pies on a large baking sheet lined with parchment paper, with the seam side down, leaving space between each.
- Bake in a preheated oven at 170°C for about 30 minutes until they become crispy and golden.
